I can't seem to figure it out. Is it supposed to be nearly impossible?
When I do it, the string always end up like spaghetti on the tuning peg. I know it is supposed to be neatly coiled up the peg. I tried it with pliers once to keep them from unraveling, but the whole time they were like a spring loaded bomb just waiting to unwrap.
Generally you want to remove one string at a time and replace it before removing the next. Attach the ball end of the new string at the bridge, then put the other end through the hole in the tuning peg. You want the string to only wind around the peg a few times once it is in tune, so you should adjust the amount of slack in the string so it is only a few inches above the fretboard. I usually position the hole in the tuning peg so it's pointed at the tuning key and insert the string from the middle of the neck outward toward the tuning key. Then you want to start turning the tuning key so the string winds counterclockwise, coming off the peg on the inward side (away from the tuning key). I usually make the first half wind go above the end of the string sticking out the other side of the hole and then subsequent winds go below so that the string never overlaps itself. Once you get the string started on the post I hold the string down around the first fret with my right index finger and pull the string up behind that with my right ring finger and pinky to keep the string tight and flat at the nut as I turn the tuning key with my left hand. Once it's relatively tight I tune it to the right pitch with my electronic tuner and cut the excess string off about 1/4" past the tuning post with a set of wire cutters. Once I have all 6 strings replaced I stretch them all by pulling them up about an inch and gently letting them back down (don't let them snap back). Then I tune, stretch, tune, etc a few times.
Once you get used to it it's pretty easy. The key is not to get the right amount of slack so you're not winding the string around the post more than a few times. It will help your guitar stay in tune too.
There's a method to "tie" the string on the tuning post as well, in which case you only have to wrap it around once or twice, but I don't do that and really haven't had nay issues not doing it.
