In today's economy it's crucial to get the most you can for your spending dollar. It's a bad idea to try to convert an acoustic-electric. Anybody who tells you to simply "string-it-backwards" hasn't really thought it through. If you examine the upper nut..where the strings pass through at the top of the fretboard, you'll notice that the slots are cut to the same thickness as the strings. If you reverse the strings, you need to replace the nut with one with the slots cut reverse. That's not too big of a job.
Next, take a look at the bridge. Notice that the saddle (white plastic piece that the strings pass over) is mounted at a slant. This angle is necessary for proper intonation. If you don't reverse the angle of the saddle, your guitar won't tune properly. On an electric guitar like Hendrix played, the bridge is adjustable. On an acoustic-electric, the saddle must actually be removed and a new slot cut in the bridge. This is a big job, especially since the pickup is mounted under the saddle.
Finally, the volume and EQ on most acoustic-electrics is mounted on the upper bout. If you flip the guitar, the controls will be on the underside where you can't see them.
All these reason combined make a conversion impractical. Although the selection is limited, you can buy left-hand acoustic electrics and this is the smarter thing to do. Actually, if you haven't learned to play yet, I'd recommend you learn on a standard (right hand) guitar. There are a lot of good reasons why this is the best way to go...but that's another discussion. (Being left handed has nothing to do with how to hold or play a guitar.)
I really can't estimate the cost of converting a guitar if you really have your heart set on it....probably over a hundred dollars.
